O ideal é sempre adicionar o sal depois de selar a carne. É um costume salgar antes para “dar sabor à carne”, mas não é aconselhável nem mesmo no churrasco, na qual a velha dica sempre foi “deixe a carne descansando no sal grosso antes de coloca-la na brasa”.
Mas, por que não salgar antes?
Porque o sal pode ressecar a carne, absorvendo os líquidos e diminuindo a sua suculência. Quando postergamos o sal, a carne não perde tanto líquido. Muitos argumentam que o descanso no sal grosso ressalta o sabor da carne. Mas, uma carne de boa qualidade não precisa deste descanso.
É uma questão de escolha e entendo muitos não abram mão do sal grosso antes. Afinal, não existe tempero certo, pois cada um tem um paladar. Mas, não custa experimentar para decidir em qual momento prefere salgar a carne para churrasco.
Na panela, eu sempre salgo após selar a carne. Na churrasqueira, eu salgo assim que tiro os cortes do fogo e utilizo um moedor de sal grosso (evite sal fino porque a chance de deixar a carne muito salgadas).
