O skirt steak é um corte mais conhecido nos Estados Unidos e nos nossos vizinhos Uruguai e Argentina, onde é chamado de entraña. Consiste no músculo do diafragma do boi e fica localizado entre a costela e o bife de vazio e bem próximo à Fraldinha. O skirt steak é um corte muito saboroso.
Pode ser consumido assado, grelhado ou mesmo refogado, desde que o preparo seja de forma rápida. Recomendamos consumir o corte mal passado, para que sua maciez e suculência não sejam perdidos no preparo.
